Instructions
To prepare the gorgonzola pasta, first bring a pot of lightly salted water to the boil to cook the pasta. In the meantime, remove the rind from the Gorgonzola cheese and cut it into cubes.
Pour the milk into a large pan
Add the Gorgonzola cheese cubes
Turn on the heat and melt the cheese over a low flame for about ten minutes
Stir often and season with pepper
In the meantime, cook the pasta in the boiling water
Drain the pasta al dente and transfer it directly to the pan
Stir over very low heat for 1-2 minutes, using a little cooking water to amalgamate the sauce with the pasta
Stir everything well and serve your pasta with gorgonzola immediately!

For a more healthy variation, and the ultimate High Protein Gorgonzola Sauce: Replace the heavy cream with ricotta cheese! :)
